Peanut Butter Protein Cups


My new delicious creation has been a BIG HIT with my kids!  These look like Reese’s Peanut Butter cups but they are much healthier!


  • 2/3 c honey (or to taste)
  • 1 cup peanut butter (or other nut butter of choice)
  • 2 t vanilla extract
  • 1 cup gluten-free oats
  • 1/2 c Instant Protein powder (I LOVE Shaklee Instant Protein* which will maintain integrity with heat)
  • mini chocolate chips (be sure they are gluten-free)

Heat honey over low heat & add peanut (or other nut) butter.  Stir until melted.

Mix in 2 t vanilla.

Add gluten-free oats & Instant Protein then spread in muffin cups lined with cupcake liners (foil ones work best).

Top with GF mini choc chips and spread to thin layer as they melt from the warm mixture. Refrigerate for 1 hour, peel off liners, then serve at room temp.

These are FANTASTIC healthy treats (just keep the chocolate chips to thin layer)!
