Creamy Chocolate Pudding (made with avocado…shh)


Did you know that you can make a rich & creamy chocolate pudding with avocado?   Avocado has some amazing health benefits–it’s been shown to help with cardiovascular disease, weight management, diabetes, and it has the ability to enhance your body’s absorption of nutrients. Combine that with the benefits of chocolate and you have something special!  Imagine eating chocolate pudding for breakfast and not feeling guilty! :)

As usual, I couldn’t find a recipe that I loved as is, so I played around testing different ingredients to come up with a creamy pudding that I thought deserved to be shared. I wanted to create something with no refined sugar, no dairy, no gluten and it had to be super easy to make. Voila!  From the unbelievable texture, to the light & fluffy creaminess and how easy it is to make – everything. It’s the best.

Note: I prefer the rich semi-sweet taste of this, which is a good starting point.  You can always add more sweetener if you like it a little sweeter.

Creamy Chocolate (Avocado) Pudding

Makes 2 servings   Prep Time: 5 minutes

  • 2 medium ripe avocados, peeled & cut into chunks
  • 3 T pure maple syrup (or your favorite sweetener)
  • 1/4 cup unsweetened cocoa powder
  • 1 ½ t pure vanilla
  • 1/4 cup almond (or coconut/other) milk

Place all ingredients into a food processor or blender and mix well until smooth and creamy. Chill or serve immediately. For a special treat, serve with whipped coconut cream or top with mini-chocolate chips.
