Apple & Toasted Walnut Salad w/ Dijon/Maple Dressing

I LOVE this salad so much that I make it almost every week! It’s a great way to get your greens and it’s so simple to throw together quickly using whatever you have on hand.  The sweet-sour flavor combination of the maple syrup and the vinegar is delicious and can be adjusted to suit your taste.  Get creative and share with us what you like!


  • 1 T apple cider vinegar
  • 1 T dijon mustard
  • 1/4 cup Extra Virgin Olive Oil (Colavita brand is one of my favorites)
  • 1 1/2 -2 T pure maple syrup (not your Aunt Jemima’s which is colored sugar water!)
  • 1 bunch of your favorite greens, lettuce, kale and/or spinach or a combination (Organic is better since these are high on the pesticide list)
  • 1 chopped organic apple or other fruit (i.e. organic grapes halved, dried cherries, strawberries or cranberries, etc.)
  • chopped walnuts (or any nut), toasted*
  • salt & pepper to taste

To Make:

Wash lettuce, kale (and or spinach), set aside and allow to dry.

For dressing: combine vinegar, olive oil, mustard and maple syrup and salt/pepper (optional).  I use a mini-food processor which works great to emulsify everything, or you can whisk everything together well.

* To toast walnut pieces, wash first then place in dry pan on stove.  Heat pan with low heat and stir frequently until toasted aroma is released.  You can leave these raw, but toasted them makes them taste so good.

Break lettuce and other leaves into bite sized pieces and place in serving bowl.  (I love a baby kale mix which is mild and already in small pieces).  Toss in other ingredients.  Drizzle the dressing on top, toss and ENJOY!  xo
